This sweet, starchy root vegetable makes a healthy addition to your winter eating regime. It is often overlooked as a source of fibre, which helps to maintain bowel regularity and may help to protect against cancer of the colon. Parsnips are a useful source of the Antioxidant Vitamins C and E and contain folate for healthy blood cells. All are reduced by prolonged cooking. Parsnips are at their sweetest a few weeks after a frost: exposure to cold causes the starch they contain to start turning into sugar.
