As their French name - which means 'eat everything' - implies, these peas are eaten pod and all. They are an excellent source of vitamin C: a 100g portion served raw in a salad or lightly stir fried provides a 130 percent of the adult daily requirement. Mange Tout also contains beta carotene, the plant form of vitamin A; potassium, which helps regulate blood pressure; and some calcium and magnesium for strong bones and teeth and a healthy nervous system. The tiny peas in their bright green flat pods are also a useful source of fibre.
